Some beers are brewed to be enjoyed. Some are brewed to be remembered.

After almost a year tucked away in whisky barrels from our mates at Cape Byron Distillery, the 2026 Barrel Aged Moonless Midnight Stout has finally emerged. And if history is anything to go by, it won't be around for long.

This is the fifth release in our annual barrel-aged series, and every year it reminds us why patience is one of the most important ingredients in brewing.

Over 10 months in Cape Byron whisky barrels, our Moonless Midnight Stout has transformed into something altogether different. The rich coffee, chocolate and vanilla notes you know from the original stout are joined by layers of oak, whisky, bourbon sweetness and gentle warming spice. The result is a velvety, full-bodied stout that balances roasted malt, tannins, sweetness and heat in every sip.

At 9.5% ABV, it's built for slow winter evenings, good company and a crackling fire.

But what makes this release truly special isn't just what's inside the bottle.

Every bottle has been hand-numbered and hand wax-dipped, making each one a little piece of this year's story. No two are exactly alike, and once they're gone, that's it. There won't be another batch until next winter.

Think of it less as buying a beer, and more as claiming your place in this year's release.
